Lubbock Avalanche Journal: Five Below, Color Me Mine, Big Chicken franchise make headlines in Lubbock

This week was packed with news from all beats, from the Lubbock City Council’s approval of a hotly contested zoning case for a student housing complex to an explosion at Texas Tech and the discovery of a mammoth tusk in West Texas. Between all of that, we also had some interesting bits of business news.

Kelley Copelin, a franchisee who also works in Color Me Mine franchise development and owns a location, discussed the company’s interest in expanding to Lubbock.

“You come in, whether you’re by yourself or with a group of friends, and everybody picks the piece they want to paint,” Copelin, also a Texas Tech alumna, said. “It’s a happy place.”

Five Below opened a new location in the Caprock Shopping Center, 2625-2905 50th St. on Saturday. The franchise owner of Lubbock’s Big Chicken was also inducted into the International Franchise Association’s (IFA) “Franchisee of the Year” class for 2025.
